About the Recipe
Black bean brownies are an excellent way to get a delicious treat without the guilt. The recipe uses no flour just blended cooked black beans. These take about 1 hr in a pressure cooker and I precook them in bulk and keep them frozen for when I need to use them. Njahi are indigenous to Kenya and are a nutritional powerhouse. This bean is bestowed with vast reserves of macro and micronutrients that are valuable for optimizing overall health. It contains a minimal amount of fat, cholesterol and sodium. This legume is an abundant source of protein, phosphorous, potassium, zinc, and copper. It also contains fair amounts of thiamine, magnesium and manganese. Aside from these, it is a storehouse of antioxidants that combats free radical damage and lowers the risk of diseases.
Ingredients
450 g cooked njahi black beans
2 eggs
56 g melted butter
60 g cocoa powder
164 g jaggery sugar
2 teaspoons vanilla bean extract
2 tablespoons brewed expresso coffee
1/2 teaspoon bicarbonate of soda
1/4 tsp salt
85 g chocolate chips or broken chopped chocolate bar
Preparation
Step 1
preheat the over to 175C. Then grease a baking dish.
Step 2
In a food processor mix all the ingredients except the chocolate chips together and blend till smooth.
Step 3
Add the chocolate chips to the mix and lightly stir with a wooden spoon.
Step 4
Pour the thick batter into the baking dish and bake in the oven for 20 mins or until a knife inserted comes out clean.
Serve with brown's mascarpone or Delia's vanilla bean ice cream.
