About the Recipe
Delicious creamy bean based fetta toast topped with dukkah spices

Ingredients
1 block Fermente Fetta
1 box crackers or sourdough toast
Olive oil to drizzle
For the Dukkah spice powder:
½ cup macadamia nuts (lightly toasted)
3 tbsp sesame seeds
2 tbsp coriander seeds
1 tbsp cumin seeds
1 tbsp black peppercorns (or 1 tsp cracked black pepper)
1 tsp fennel seeds (optional but lovely with macadamia)
1 tsp smoked paprika
½–1 tsp fine sea salt
Pinch of chili flakes (optional)
Preparation
Toast the nuts & seeds
In a dry skillet over medium heat, toast the macadamias until just golden. Remove and cool.
Toast sesame seeds until fragrant.
Toast coriander, cumin, fennel, and peppercorns separately for 1–2 minutes until aromatic.
Grind the spices
Use a mortar & pestle or spice grinder to coarsely crush the coriander, cumin, fennel, and pepper.
Avoid over-grinding. dukkah should be crumbly, not powdery.
Combine everything
Coarsely chop or pulse the toasted macadamias.
Mix with the sesame seeds, crushed spices, smoked paprika, chili, and salt.
Toast Bread + Serve
Cut a slice of Fermente Fetta onto the toast or cracker. Drizzle with olive oil and dukkah and place in an oven at 180 c for 5 mins. Serve warm
