About the Recipe
A wholesome, gut-friendly soup made with White sorghum, Pearl millet, Wheat and fresh vegetables. Soaked, slow-cooked, and packed with flavour. A comforting way to enjoy the benefits of heritage grains.

Ingredients
Grains
½ cup sorghum (mtama), soaked overnight
¼ cup pearl millet or finger millet, soaked 6–8 hrs
¼ cup wheat grain soaked 6–8 hrs
Soup Base
1 tbsp ghee
1 onion, finely chopped
3 cloves garlic, crushed
2 carrots chopped
½ tsp cumin
Black pepper to taste
Liquids
4–5 cups homemade vegetable or bone broth
Sea salt to taste
Garnish
Fresh Coriander/ Parsley
Preparation
Cook the grains
Drain soaked grains.
Simmer sorghum first (30–40 min) until tender.
Add wheat and millet in the last 15 min of cooking.
Build the flavour
Heat ghee in a pot.
Sauté onion until soft.
Add garlic, ginger, and spices; stir gently to bloom.
Add vegetables Stock
Stir in vegetables
Pour in stock and simmer 10–15 min until veggies soften.
Combine
Add cooked grains to the soup.
Simmer another 10 min for flavours to meld.
Stir in greens at the end.
Finish & serve
Adjust salt to taste.
