About the Recipe

This pesto blends pumpkin seeds with Grove & Meadow Macadamia Parmesan for a savoury umami depth, lifted by the fresh, green brightness of basil.

Macadamia Parmesan & Pumpkin Seed Pesto

Ingredients

1 cup fresh basil leaves, lightly packed


½ cup toasted pumpkin seeds


2 cloves garlic


½ cup olive oil (add more to loosen if needed)


¼ cup grated Grove & Meadow Macadamia Parmesan


1–2 tbsp lemon juice


¼–½ tsp salt, to taste


Freshly cracked black pepper


Optional: 1 small handful spinach or amaranth leaves for extra green vibrancy

Preparation

  • Toast the pumpkin seedsHeat them in a dry pan over medium heat for 2–3 minutes until fragrant and lightly golden. Cool slightly.

  • Blend In a food processor combine basil, pumpkin seeds, garlic, Grove & Meadow Macadamia Parmesan, salt, and lemon juice.

  • Stream in the oil With the processor running, slowly drizzle in the olive oil until smooth and creamy. Adjust consistency—add more oil for a looser pesto or a splash of water for a lighter version.

  • Taste & adjust Add extra lemon, salt, or pepper to balance richness and brightness.
