About the Recipe
red sorghum makes a delicious flaky pastry

Ingredients
120g (1c) Grove & Meadow Red sorghum flour
180g (1.5 c) Grove & Meadow Stoneground Flour or gluten free flour
227 g cold Brown's butter cubed (or Lard) or Grove & Meadow plant based butter
1 tsp salt
110 g iced water
Preparation
1. Place the flours in a food processor.
2. Add the cubed butter and salt and process till resembles breadcrumbs.
3. Add the iced water slowly till it forms a dough.
4. Chill the dough by wrapping in a cling film for at least 30 minutes. After 30 minutes, roll it out to and put it in the quiche mould. Press with fingers gently to ensure that the dough evenly covers the mould.
5. Prick the base of the dough with a fork and bake at 180 degree C for 8-10 minutes.
